The Peach Truck Cookbook

In this fun and imaginative collection, husband-and-wife team Jessica and Stephen Rose, who sell Georgia peaches throughout Nashville from their Peach Truck, superbly demonstrate the peach’s versatility in a wide array of sweet and savory dishes. The Roses share their enthusiasm for the fruit in Dutch Baby, “a popover-pancake hybrid” baked in a cast iron skillet, as well as in coffee cake, salsa, jam, and the classic peach pie. Savory dishes include peach fritters, a hush puppy–like riff with garlic powder, coriander, Monterey Jack cheese, green onions, and a red bell pepper; roasted chicken with onions and peaches; a white pizza with chile, pancetta, and peach slices; pearl couscous with chickpeas, eggplant, Kalamata olives, and fresh peach quarters; a pulled pork sandwich with a peach-bourbon barbecue sauce; peach and sausage empanadas; and a peach prosecco granita. The recipes are accessible, and ingredients easily sourced (the authors provide a guide to the various peaches available). The Roses’ excellent offerings are sure to inspire many a trip to the local farmer’s market or orchard.

Stephen and Jessica Rose settled in Nashville during its culinary renaissance in 2010, though they found that the peaches available in town left something to be desired. Instead of coming from Georgia, a six-hour drive away, the peaches were traveling thousands of miles, arriving mealy and unripe. The Roses were determined to provide Nashville with quality peaches with the help of their family friend's Georgia peach farm. Initially selling fruit out of their truck, they quickly discovered a market, and their peaches began appearing on and inspiring restaurant menus throughout Nashville. The recipes represent Stephen's Southern heritage, but also the influences of Nashville. Packed with over 100 sweet and savory recipes that all include peaches, readers will find inspiration for breakfast, small bites, lunch, drinks, dinner, and dessert. Favorites include the recipe for a peach-roasted chicken created by a James Beard-nominated Nashville restaurant, peach-infused pulled pork, and a Nashville-inspired ricotta cake with elderflower peaches.
