Hester (The Vegan Slow Cooker) proves in her most recent vegan cookbook that oatmeal isn't just a breakfast food. After describing six types of oats (e.g., steel-cut, oat flour), she uses them to make everything from pantry staples (easy oat milk yogurt) to savory meals (creamy butternut squash oat soup) to beverages (flavored oat milk). Breakfasts are, of course, included, and these range from traditional stovetop and baked oatmeals to trendy overnight refrigerator oats in jars and agave-sweetened smoothies. Most recipes can be made gluten-free, soy-free, or oil-free, and all (except the pet treats and beauty products) include nutritional information. VERDICT Hester's varied recipes showcase the oat's remarkable versatility. Highly recommended for vegan collections.
