Having written his comprehensive guide to all things fermented,The Art of Fermentation (2012) Katz turns philosophical, trying to find deeper meanings in what the physical nature of fermentation means in the wider culture. With unstoppable force, dough swells, cabbage sours, beer turns intoxicating, and milk curdles. In parallel motion, the larger world also ferments, transforming into something constantly new and different. Society evolves, technology advances, and climate changes. Katz laments excessive use of antiseptics, observing that their ubiquity attacks beneficial microbes just as much as pathogens and that such overuse may contribute to the apparent rise of allergies. This mindless obsession with cleanliness may also result in multiplication of pathogens resistant to the entire spectrum of lifesaving antibiotics. Katz describes how even viruses mutate, citing his own battle against the havoc of HIV. Color photographs grace Katz?s text.
