The Make-Ahead Sauce Solution

Former chef and caterer Bailey (A Taste of the Maritimes;{amp}nbsp;Maritime Fresh) presents recipes for freezer-friendly sauces that can be made ahead of time to accompany staples such as pasta, rice, tofu, chicken, pork, fish, and beef. The sauces, which take more time to prepare, can be made in advance over the weekend and frozen in serving-size portions for use during busy weeknights. From "Creamy Chipotle" to "Tomatillo Avocado," recipes rely on basic ingredients and minimal instruction. Each is accompanied by a chart that lists foods the sauce complements along with serving tips. A variety of freezing methods and freezer storage tips are included, along with an appendix featuring flavor enhancers to make with compound butters such as herb butter and flavored salts such as rosemary lemon salt. VERDICT A useful resource on preparing sauces to enhance otherwise routine dinners.
