In her first cookbook, food blogger Daum offers a thoughtful collection of fresh vegetarian recipes inspired by the seasons and attuned to environmental sustainability. Recipes are grouped by season and then meal type, including snacks, mains, drinks, and sweets (made without refined sugar). Several dishes are vegetarian spins on comfort food, including gems such as peach guacamole and root veg fritters. The chapter on homemade plant-based milks and butters is useful for beginners, who will appreciate Daum's guidance on soaking and cooking different grains and legumes. Although most dishes are vegan, Daum's recipes are designed to be highly flexible in both ingredient choice and method of preparation. As a result, this book will appeal to home cooks with a range of dietary needs and culinary skill levels. VERDICT Daum has created seasonal recipes that reflect her perspective as a Canadian currently based in the Netherlands, which sets this book apart from other vegetarian collections.
