Finely ground dried chickpeas make a nutrient-dense and grain-free flour that can be used in a wide array of sweet and savory applications. Home cooks may be familiar with panisses (chickpea fries) and socca (a type of chickpea pancake), but they're unlikely to have encountered the breadth of chickpea flour recipes delivered here by Saulsbury (Power Hungry). After introducing the health benefits of chickpea flour and suggesting healthy pantry must-haves (e.g., nondairy milks, unrefined sweeteners, eggs, and egg substitutes), the author shares breakfasts, breads, snacks, sides, entrees, and desserts that highlight this inexpensive ingredient's versatility. Dishes such as za'atar chickpea crackers, black bean and mango empanadas, and tahini and jam thumbprints include beautiful photographs and clear instructions, which will satisfy a broad audience. VERDICT Essential for gluten-free cooking and baking collections.
