There's much for all health-conscious home chefs to enjoy in Shoyer's fourth cookbook (The Kosher Baker, 2010; The New Passover Menu, 2015). Though the 80 recipes are geared to Jewish laws of kashruth, which dictate the separation of milk from meat and other practices, they're easily adaptable to any home cook's kitchen preferences (though perhaps breads and desserts are less so). And, after all, healthier, as defined by Shoyer, promotes a philosophy that all modern chefs will embrace. What stands out is her integration of highly useful tips within many of the recipes' instructions: repurpose a crudites plate in soup, watch out for unpasteurized eggs, follow these hints for unsticking grilled chicken, for a few examples. Each recipe is labeled as dairy, pareve (goes with either meat or milk menus), gluten-free, vegan, or Passover, and prefaced by a very personal story of Shoyer's family and friends. Color photographs don't accompany every dish, but the joy is in the visualizing. Imagine mango coleslaw and Moroccan lentil soup, coq au vin blanc and brisket bourguignon, tzimmes puree and chocolate quinoa cake.
