With the same candor that made her debut cookbook, Make It Easy, and long-running podcast, Didn't I Just Feed You, a success, Billis returns with a collection of creative recipes that will make home cooks rethink and reinvent chicken dishes. Beginning with basics, such as buying and handling, Billis provides detailed instructions, along with step-by-step photographs illustrating how to choose the right cut of chicken for any meal. What follows is a series of easy-to-understand recipes that can serve a family or a crowd: sheet pan fajitas with lime crema, pepper jack guacamole burgers, and green-and-white chicken chili, along with options for marinades (such as orange-chipotle) or all-purpose sauces (such as chimichurri). As in her previous cookbook, Billis writes with busy people in mind. Chapters are divided by preferred method of cooking--roasting, braising, saut�ing, stir-frying, stewing, grilling--and boast vivid photographs throughout.
