Keep in mind the magazine's name, and you have the clue to the audience for this cookbook. Not a trendsetter publication, Family Circle nonetheless mirrors the healthy, light cooking so ubiquitous today. This book's 200 recipes go far beyond a list of ingredients, instructions to follow, nutritional information, and number of servings. Inserted into almost every page (each dish has its own color photograph) is a test-kitchen tip, a nutrition note, a guide to a particular array of foodstuffs, or variations on a theme. Learn how to cut up a chicken or the difference between light and extra-virgin olive oil; learn about substitutes for proteins; learn serving ideas (for instance, instant polenta flavored with Parmesan fits well with pork roast). By far the thrust of this cookbook is main meals at 500 or fewer calories (featuring such tantalizers as scallop-couscous paella, harvest pot pie, penne and turkey sausage, and fish tacos).
