Every few years the raw-food fad returns with claims of being more natural and healthful than more traditional fare. Aziz (coauthor, Raw Food: A Complete Guide for Every Meal of the Day) offers this beautifully illustrated volume with her take on the subject. A diet of raw foods increases intestinal motility, which may be a good thing for many people--though not all. Some nutrients are lost in the cooking process, but others, in carrots, for example, are modified so that the body can absorb them, as it cannot do when those foods are raw. Claims about the detoxifying benefits of raw foods are largely unproven, but Aziz is quite sensible on this subject, advising readers to make the switch slowly and to check with their doctors before they begin. A variety of appetizing recipes is provided, and anyone might profitably incorporate these into an existing diet.
