Convection ovens, which have long been used in restaurant kitchens, have become increasingly popular with home cooks, but many people tend to ignore the benefits that these stoves offer (they cook more evenly and more quickly than standard ovens). Ojakangas, author of more than 20 cookbooks, wrote one for countertop convection ovens (something of a passing fad) decades ago, and she's become a true convert. Her new title is a practical, eminently usable guide to making the most of modern convection ovens with more than 150 appetizing recipes, along with myriad useful tips and charts. One of the few books on the topic, this is recommended for most collections.
