Nutritional expert and bestselling author Fuhrman (Eat to Live, The End of Dieting) shares 131 quick-to-assemble recipes based on his nutrient-dense approach to eating, which he claims will promote lifelong health and permanent weight loss. These plant-based, uncomplicated recipes create dishes containing, according to Fuhrman, “the healthiest foods on the planet.” Along with prep-ahead grain-focused breakfasts such as a date-sweetened cinnamon creamy buckwheat porridge and smoothies that include such ingredients as citrus, kale, and ginger lemonade, there are rich nut/seed-based salad dressings—such as an orange sesame dressing and a strawberry balsamic dressing—for numerous main-dish salads. Festive dips, chips, and superfood snacks such as Italian chickpea popcorn are also featured along with soups and riffs on veggie burgers, pizzas, and wraps. There are plenty of dessert options too, including a mang and macadamia ice cream, puddings, and cookies. Most recipes take only minutes to assemble; vegans, nonvegans, and raw foodies also will find suitable options. While the dishes remain unfussy, many recipes require a quality high-powered blender or food processor.
