Kansha, "appreciation," is the theme of Andoh's (Washoku: Recipes from the Japanese Home Kitchen) copiously researched book. Kansha, a practice of Japan's culinary tradition, is evident in the book's no-waste techniques and emphasis on a plant-based diet. While some ingredients may be difficult to find, Andoh offers many approachable and healthful recipes such as Skillet Scrambled Tofu with Leafy Greens and Gingery Enoki Mushrooms with Carrots. An American who lives in Japan, Andoh makes this cuisine accessible to a Western audience by including detailed instructions, a thorough glossary, and suggestions for substitutions. VERDICT Because of the lack of books available on this topic, this will be much appreciated not only by vegetarians, vegans, and Japanese food enthusiasts but by any adventurous cook looking for a distinctive perspective on fresh, healthy food.
