Twenty-five varieties of icebox cake, a layered dessert made of cookies and whipped cream, appear in this cheery collection from literary agent Sagendorph and recipe developer Sheehan. For each cake (e.g., peppermint-chocolate, chai-ginger, lavender-blueberry), the authors give the option of using store-bought or homemade wafers, crackers, or ladyfingers--a wise choice, as many cooks turn to icebox cakes when they don't have an oven, or want to avoid turning one on. They also vary the texture of these pudding-like treats by topping them with chopped candies, sliced fruits, crushed cookies, or candied citrus peels.
