Douglas, the chef/owner of half a dozen restaurants in Seattle (including Etta's and Dahlia Lounge), previously authored two appealing cookbooks. He grew up in Delaware, and when he moved to Seattle several decades ago, he couldn't believe crab cakes were nowhere to be found. But, as he writes, he soon -fixed that! - Presented here are the recipes for his favorite crab cakes -those he serves at his restaurants or makes at home -along with some contributed by chef friends. There are classics and -global/new wave - crab cakes, crab-cake sandwiches, crab cakes for brunch, and crab-cake cousins like Poblano Crab Rellenos, along with sauces and salsas. Highly recommended for area libraries and any collections where seafood cookbooks and/or Douglas's earlier books are popular.
