Our nameless chef, who whispers over his pots, creates dishes that can transform those who eat them. Even when he was orphaned in a bloody palace coup in Constantinople at the age of five, he showed such culinary talent that he was seen as the Pasha of Cuisine by the master cook in the Royal Kitchen. Such a pasha appears only rarely, with a perfect palette and such skill with flavors that he enhances all the cooking in the world, but he must be trained. So, after working with the best chefs in the Ottoman Empire, the cook spends two years with the twin el-Haki brothers, one skilled in astrology and the other in medicine, then more than a year with the Lady of Essences, who specializes in spices and sends the cook to Alexandria for his final test with the Master Librarian. Back home, he puts in place his plan to win the hand of Kamerb, a dancer in the palace's House of Pleasure, whom he has loved for years. Turkish author Ersin's supple prose fashions scents that virtually reach the reader, making this historical fiction that whets the appetite well as the imagination.(Reprinted with permission of Booklist, copyright 2018, American Library Association.)
