When readers next attend a birthday party, they might spare a respectful thought for the historical origins of the table's centerpiece: the cake. Why are there are so many regional variations of this confection, and why has it become such a vital part of our celebrations? Levene's (history, Oxford Brookes Univ.; The Childhood of the Poor) thoroughly researched book provides a detailed exploration of how the emergence of new ingredients (such as plentiful sugar), better technology (regulated ovens and steady temperatures), and cooking techniques have combined to develop the dessert we recognize today. Levene believes that "cake is an expression of the way society forms ideas about childhood, motherhood, sweetness and celebration."
