An add-on in most cookbooks, marinades have seldom been given their own title, but this snappy tome is out to prove that an herb or spice soak is more than a flavoring for meat—it’s also a means for simplifying cooking. One should think about marinades as one thinks about the slow cooker, says Hungry Cravings blogger Vaserfirer (Seared to Perfection; Flavored Butters), since most of the work is hands-off. A quick how-to covers the ingredients, techniques, and equipment needed to get started. The recipes are grouped by category, from Herbs and Spices to a beverage chapter that includes soda and beer bases as well as an enticing whiskey peppercorn marinade for steak.
