Just in time to capitalize on summer's garden bounty, Ridge and Kilmer-Purcell have issued another cookbook from their upstate New York farm's kitchen. This time they focus on vegetables. Arranged by seasons, these recipes have much to offer. To appeal to a large audience and encourage more vegetable consumption, recipes cover a broad spectrum. Not all are completely vegetarian, and only a few are intrinsically vegan. The authors' imaginative interpretation of eggplant meatballs may make diners not ever realize that their spaghetti has no meat. Ginger and scallions fragrantly freshen green beans. There are also a few ways to pickle produce beyond everyday cucumbers. Dessert ideas include a chocolate cake based on red beets and a pie made of corn kernels. An appendix lists sources for heirloom seeds.
