This entertaining follow-up to They Eat That?, which looked at food around the world, highlights the different culinary traditions of the United States, from alligator and cheese curds to lutefisk and whoopie pies. Deutsch (culinary arts & food science, Drexel Univ.) admits that it would be impossible to produce an exhaustive work, but this is a solid reference book. Entries are alphabetically arranged, and each begins with a discussion of the origins of a dish, followed by a recipe and a list of books and websites for further reading. Deutsch states that readers "may find this book a great bedside, travel, or waiting room companion." While the title's hefty size might not be conducive to these activities, this is certainly a light, accessible read.
